Easy Lemon Bundt Cake

A light and zesty cake that’s simple to make, with a refreshing lemon flavor perfect for any dessert table.

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tbsp lemon zest from about 2 lemons
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup milk
  • Lemon glaze recipe below

For The Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice

Cake Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 10-inch bundt pan.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • Using a stand mixer, beat butter and sugar until light and fluffy (about 3 minutes).
  • Add eggs one at a time, beating well after each addition.
  • Mix in lemon zest, lemon juice, and vanilla extract.
  • Gradually alternate adding flour mixture and milk, beginning and ending with flour. Mix until just combined.
  • Pour batter into prepared bundt pan and smooth the top.
  • Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  • Let cool in pan for 10 minutes, then invert onto a cooling rack.

Glaze Instructions

  • Mix powdered sugar and lemon juice until smooth. Pour over cooled cake.
